Bengal Tomato Chutney
2 cups tomatoes cut in large cubes
¼ teaspoon panch phoran seeds
1 tablespoon raisins, soaked
½ teaspoon ginger, cut into thin strips
1 teaspoon green chillies, chopped
1 tablespoon sugar
1 teaspoon oil or mustard oil
Salt to taste
- Heat the oil in a microwave safe bowl for 1 minute.
- Add the panch phoran seed and microwave for 1 minute.
- Add the tomatoes and salt and mix well. Cover and microwave on high for 3 more minutes.
- Add the raisins, ginger, green chillies and sugar and microwave for 10 minutes stirring twice in between after every 4 minutes.
- Cool and store refrigerated in an air-tight container.
